Fluffy, creamy, light as air and bursting with nutmeg-gy goodness, oh, Eggnog and I most definitely have a love affair. Nothing brings about the holidays and all that is merry quite like a mug of its creamy delight.  It is almost a requirement for this time of year and the uses in my house are limitless.   Take cream in your coffee?  Use Eggnog to take your coffee from every-day to holiday!  Want to take your pumpkin pie to the next level?  Make your own evaporated Eggnog to replace that canned, evaporated store-bought milk.  Need a perfect holiday dessert?  Turn that Eggnog into ice cream and you will be in heaven! Now you can go out and purchase Eggnog at your grocery store but I swear, if you make it from scratch once, you will never go back.  Also, it’s so simple you will be shocked that you haven’t made it from scratch before!  So grab a carton of eggs and take a few moments to make this decadent holiday drink from scratch.  Your holiday just may never be the same.

This is traditional eggnog, the kind that your grandma used to make and pour into her huge crystal punch bowl, set out next to her aluminum tree with tinsel and twinkle lights aglow.  There are of course, many recipes online for cooked eggnog that you should consume if you are a child, pregnant or have a compromised immune system.  So do search out those recipes if you are any of the above, if not, enjoy this fresh liquored up kind.  Oh and please, for the love of everything holy this holiday season, do not, I repeat, DO NOT use store bought ground nutmeg.  If I give you one gift this holiday season let it be the gift of freshly grated nutmeg.  Try it, you’ll know instantly what I am talking about.  The first moment you rub that whole nut across your zester or mini grater you will smell the difference and your holiday nog will be the stuff of legend.   Oh! Also, if you are trying to decide between rum or brandy for your nog why not choose both! I love White Christmas, it’s inexpensive and gives just that perfect balance to your Eggnog.

You will need

  • 2 cup heavy cream
  • 1 cup whole milk
  • 6 eggs, separated
  • 1 cup rum, brandy or a mixture of the two
  • ¾ cup sugar
  • 1 teaspoon freshly grated eggnog

How To

  • Place egg yolks and sugar in a stand mixer and beat until eggs are creamy and light in color
  • Add cream, milk and liquor
  • Pour mixture into a bowl and set aside
  • Clean out your mixer and add in egg white
  • Whip until soft peaks form
  • Fold into yolk, milk and liquor mixture
  • Top with nutmeg, drink, breathe and enjoy

Thanksgiving Garland {DIY)

IMG_5671I don’t know about you but I am busy! This time of year is so full of friends and family and celebrating that trying to carve out time for a craft or decorations is as challenging as running a marathon…I kid, but not really. With that said, now is not the time to cut corners. The hours spent baking your leftover Halloween pumpkins into puree for your holiday pie gives you time to reflect on all the things to be thankful for. The care in kneading your homemade rolls gives your mind rest from the everyday as it wanders to all the joy this season brings.

As you pin your favorite Thanksgiving side dishes, your thoughts lean toward the laughter and family that is to come at the end of the month around the table filled with food, fun and laughter. The shorter days and darker evenings lend themselves to huddling in the kitchen around simmering pots of cider, warming the body and the spirit.

I am looking for something little; a sweet, easy, craft to bring a bit of November charm to the house for thanksgiving. Nothing crazy, mind you, just something for my hands to do on these foggy and chilly Oregon nights. This Thanksgiving Garland is perfect for adding a little celebration to the dinner table; you could even make a minute one to be a pie-topper on your pumpkin pies. The Perfect Roast Turkey

The Turkey. It’s the prize of the table, no need for a centerpiece with this bird, for if it’s cooked right its glory is more than regal enough to make your table glow. This year we are getting our own bird and I couldn’t be more excited to try a wild Oregon bird. Normally I pour over the local stores and their turkey providers, weighing the pros and cons of heritage birds, organic birds, and trying my hardest to find a free range bird that lived a healthy life before it lands on my table. This year my husband will be hunting for a perfect wild bird to grace our table and I am over the moon!

In the spirit of the season I did a blog on My Cooking Spot direct from Marcella Rose’s kitchen of my classic recipe for the Perfect Roast Turkey. I have included a recipe for brining as I feel it makes a luscious bird full of juicy goodness but you can skip ahead to the roasting directions for your bird if you want to by-pass the 24-hour brining process. I am using my great grandmother’s recipe for the Perfect Thanksgiving Turkey. She would soak cheesecloth in wine and butter and drape it over her bird; this allows the breasts to retain more flavor and moisture as it cooks. Simply remove and discard the cloth for the final hour of cooking and a perfectly brown turkey will be your reward.

Game Day Spread {Gluten Free}

So there are sports happening I hear.   Now, don’t get mad, but unless it’s soccer, I am rarely paying attention. However, don’t get me wrong, I LOVE throwing a game day bash.  I am not sure which ones, or how many, or how close we are to the Super Series or World Open or Final Bowl or whatever you call it but… game on right!!!

We all know the normal spread, wings, pizza, and all things fried, greasy and wonderful. But just because that is always how it’s done doesn’t mean there aren’t any other options.  What about a game day that is filled with food, that is good for you, but also so tasty the men keep digging in?  Well readers look no further, I am bringing you a little healthy spread  for this game season…time….event-bowl; you get it.  So I threw together some super healthy and super quick game day snacks.  What is even more exciting is that it all tastes fantastic; this Hot-Damn Cauliflower will have you licking your lips and tips of your fingers begging for more…trust me.  Serve this spread with a crisp fall, hard-cider and it is Gluten Free to boot!  The best part is the day after game day you are going to feel like a million bucks!! What more could you ask for?

Hot Damn Cauliflower Hot Wings  – recipe at My Cooking Spot

Broiled Baby Bell Pepper

  • Preheat Broiler
  • Rinse and dry peppers
  • Toss in 1 Tablespoon of Olive oil to coat
  • Roast until blistered about 7 mins turning once halfway through

Braised Asparagus

  • Preheat Broiler
  • Cut the hard ends off of rinsed asparagus
  • Toss in 1 Tablespoon of Olive oil to coat
  • Sprinkle with steak seasoning
  • Broil turning once until brown but not soggy about 3 mins (more for thicker asparagus)

Creamed Lion’s Mane Mushroom on Conchiglie

November is here. We’ve had a rough start to the month as the Chestnut Cottage on B Street lost our Box Elder Tree. We are renting, so we didn’t have much say in the matter, but our landlord (being amazing) did all they could to save the tree and in their defense, one of its giant trunks came crashing into the neighbors yard during a windstorm a few months ago. Six arborists later, the conclusion was that this lovely tree had to come down for the safety of all. To be honest I was a mess, sobbing like a small child who has lost their first pet goldfish. Of course I went out and purchased a nice bottle of pink champagne to toast the tree. My husband (also being ever amazing) left the lights wrapped around it for that final night, waking up at 4 am, donning a headlamp to take them off in the foggy-fall Oregon morning before they came to take her down.

As I have been mourning the tree, I realize how thankful I am for the gifts it gave us; the shade it provided, the cocoon of safety her spreading branches gave our little house, her branches giving support for the patio lights that strung across our yard. As I was giving thanks to the tree for its gifts, I started noticing the other gifts that had come my way. My parents, as badass and rad as they come, came up for our annual Halloween Soirée. My mom handed me a bunch of fresh sage as beautiful and fragrant as any floral bouquet. My father gave me a bottle of perhaps the best Sauvignon Blanc I have ever had in my possession. My sweet in-laws had gifted us some stellar onions, fresh from the black earth of Idaho. Then there are the neighbors, this band of supreme human beings, who constantly make our lives ever so much better. Living in Oregon, I have noticed there are two types of friends, there are friends, and then there are friends who give you mushrooms; these neighbors are the latter.   Yesterday they stopped by with a box full of magic, a lion’s mane mushroom so full and beautiful it looked like a creature from the sea. As I sat on the porch gazing sadly at the stump left from our beloved tree, a recipe came to me; celebrating the gifts that I had been given and turning my attitude of loss to one of thankfulness, seemingly perfect for the season.

I created this recipe full of gifts, Creamed Lion’s Mane Mushroom on Conchiglie. As these mushrooms are rare, you can substitute with your favorite fungi, be it chanterelles, portabellas, or even the humble button mushroom. Whenever making pasta, choose your noodle based on sauce; Conchiglie is perfect for this thick mushroom sauce as the little shells scoop up the puree and hold it tight delivering sheer joy to your lips.

You will need

1-pound mushrooms – rough chopped

4-tablespoons butter

1 yellow onion – diced

4 cloves garlic – minced

1-cup white wine – only cook with wine you would drink so make it good

1-cup cream, plus more for thinning

16-ounces of your favorite pasta – I used Conchiglie

¼-cup chopped sage

Salt and pepper to taste

How To:

Melt butter in a large sauté pan over medium high heat

Add onions and cook until light brown

Toss in garlic and sage and stir until fragrant – about one minute

Add more butter to the mushrooms if needed, turning down the heat to medium

Allow the mushrooms to brown for 2 minutes and flip

Begin to boil water for your pasta

Add the wine to the sauté pan and bring to a boil until the wine is absorbed into the mushrooms

Turn down the heat to medium, adding the cream

Add pasta to boiling salted water

Once the cream has begun to thicken, remove ½ of the mixture to your blender

Blend and add back to the remaining half of your sauce

Strain your pasta and toss with Parmesan and fresh sage and serve

Vintage Halloween Bash

All Hallowe’en

When the world is wrapped in slumber

And the moon is sailing high,

If you peep between the curtains

You’ll see witches riding by

 

It was this poem, printed on a sweet vintage style Halloween card from my mother that inspired my Vintage Halloween Bash.   I grabbed my witches hat and broom to fly back in time bringing some old school charm and whimsy to the evening. I wanted this party to feel classic so Matthew bought me a fantastic book on vintage Halloween traditions and games and we wove them into the evening, creating a magical night. You set the tone with the invitation of course, so I mailed out vintage inspired cards with a hand written invitation inside. We played vintage fortune telling games, had food with the flare of days gone by, and partied into the evening.

 

We kept it classic in an orange and black palate. I spent the month of October crafting away, draping dip-dyed tulle around and placing crows and owls on the fence to keep a vigilant watch. I crafted hand-painted paper bags into a Cemetery Luminary and modge-podged tissue paper into floating ghosts with led lights tied inside to glow into the evening. We must have cut out a million bats; hanging them in flocks around the house and from the chandeliers casting eerie shadows on the walls. Pumpkins with holes drilled through them were stuffed with lights and glowed away on the porch. You can’t have a vintage Halloween without a Scarecrow so we propped up an old one that was gifted to me from my Grandma to make sure the crows stayed on the fence.

I have spiders on the brain, spinning webs throughout my thoughts.  Ideas buzz and stick in the gossamer threads as eight legs turn them over and over coating them with white filaments until they have become a reality then the spider sits and waits until the next idea comes flying by.  Spiders; they are the embodiment of Halloween, dark, dangerous, frightening and simply perfect for our annual Halloween party theme.  I have been toiling away; craft after craft, recipe after recipe.  I perfect and make lists, checking-off each spectacularly arachnid-ish “to-do” with joy and delight for the upcoming soirée.  I lack expendable income to simply go out and buy much of anything for parties so mostly things are crafted as imaginatively as possible with reused house-hold items and elevated paper crafts. This Spider Tablecloth craft is one of my favorites; it was really cheap and has a fantastic impact.  I was even able to repurpose a stained, totally ready to trash, tablecloth, so I did it on a dime!

 

You will need:

Tablecloth

Iron – no steam

Scissors

Template – I used one from the queen of everything Martha Stewart

Iron-on transfer paper

 

To do

Print out templates onto iron on paper

Cut around edges of images leaving 1/8 of an inch of transfer paper

Using the no steam setting on the iron place over images for 10-20 seconds

Once image is cool enough to touch gently remove the paper to reveal the image

Mad Scientist Halloween Bash!

It’s pretty obvious that I adore Halloween.  This year I want to give you readers a few of the parties I have thrown or catered in the past.  I hope you enjoy and that it inspires some party throwing of your own.

I have some pretty amazing friends in this quaint town of Ashland, none better or more fabulous than Paul and Amara.  They are the type of people who are always down for a few cocktails and a game of Cards Against Humanity or a fancy night out.  They have been my guinea pigs on many an occasion for blog posts and I simply adore them both.  Paul, an amazing audio book narrator, has superb taste in glassware.  There is not higher compliment from Paul than getting something poured (usually aged for at least 10 years) into one of his fantastic glasses; absolute heaven.  Amara, a copywriter for Harry and David, seems to always be on trend; rocking the coolest jewelry or a fantastic blouse or (my favorite) her neon Christmas décor, complete with blazing white Christmas tree, I mean what could be more awesome?  I love everything she styles and everything she does.  I find her haute-ness to be particularly amazing since this quaint little town is frozen in either the year 1901 or 1971; it’s weird but true.  Now that you have the back story, you will understand how perfectly ecstatic I was when asked to co-host a Halloween Party with them.  They thought of the most fantastic theme (no surprise), Mad Scientist!

This party was AMAZING.  Sadly my pictures are not, this was before I had the fantastic camera I now use and the lighting was low and spooky.  I hope you my avid readers will forgive the spotty shots, but the ideas and execution can still be seen, I hope.   Paul and Amara outfitted their home with sheets of plastic covering almost every space and converted a spare room into a photo booth “kill room” where you could be wrapped up a la Dexter and have portraits taken of killing or being killed.  They even had a friend dress as Dexter himself to stand in the shots!   Let me just say, there are some pretty epic shots of me as Mary Poppins going on a killing spree.  They completed the look with beakers and jars filled with colored water and dry ice.  They even stuffed sweet looking stuffed animals into mason jars with glow sticks and yellow water to give the whole place a formaldehyde feel.  One word: GENIUS.

This party theme is killer for a Halloween Bash but could be just as fun without the spook for a kid’s party or cocktail party!

I took care of the food, getting extremely creative with the theme.  The menu included:

Savory

  • Sterile Crudité – all white veggies served in a shiny metal pan
  • Surplus monkey legs – my mom’s famous rosemary marsala drummettes with the bones exposed
  • Penicillium roqueforti (blue cheese) with Salami and Crackers served in petri dishes
  • Lobotomized Brain – made with shrimp and a spicy lemon horseradish gelatin

Sweet

  • Coagulated Candy Corn – made with red food coloring
  • Blood Slide Lollypops
  • Periodic Cookie Table of Elements – Each element hand piped onto a square cookie frosted white and arranged in order

Libations

  • Ta-KILL-Ya – Served with lime and salt
  • Redrum Punch – Spiced rum with blood orange juice
  • Nuclear Reactor Cocktail – Midori, homemade sweet and sour, vodka
  • Glass Cleaner with Ammonium D – Crème de Violet, bitters, and sparkling wine
